You can use dukkah on roasted vegetables or a roast chicken, add a sprinkle to your eggs, or devour it with a slice of sourdough dipped in olive oil. Mmmmmm.
You can use any quantity and type of nuts you like. This is how I like it.
Ingredients

1 cup of pistachio nuts

½ cup of cashew nuts

½ cup of walnuts

1 cup of skinless hazelnuts

½ cup of macadamia nuts

½ cup of skinless almonds

¼ cup of curry powder*

¼ cup of sumac
-
1 tablespoon of turmeric

1 tablespoon of sea salt
Directions
Spread nuts over a tray and bake in the oven until slightly golden. Let it cool down.
Once cool, pop the nuts into a food processor along with the spices and pulse until you get your desired consistency. NOTE: make sure you keep an eye on the food processor while it mixes, the fats in the nuts can bind together if you blend it for too long and you won’t get that grain like consistency!
Recipe Note
* Curry powder usually consists of: coriander, turmeric, fennel, black pepper, cumin, chilli powder, fenugreek, garlic, ginger, and salt (I usually use the brand Clive of India Curry ‘authentic curry powder’.
Dukkah reminds me of my childhood. I remember going to our family friends place, and without a doubt on arrival there would be an anti-pasta style plate in the middle of the table. Along with all the salami and cheeses, I remember grabbing a piece of sourdough, dipping it in olive oil and then dipping the bread in the dukkah. These days, I use dukkah on roasted asparagus, sprinkle it over a pumpkin and feta dip, or garnish it on a simple roast chicken, but whenever I’m hungry or need a quick nourishing snack, I go back to my roots and nourish my soul with the sourdough and olive oil!
