This is the base of all my tomato base recipes. I add my Chilli Harissa to this for baked eggs, use it in conduction with a vegetable stock concentrate for meat balls, and have it on rotation with pasta. Simple classic ingredients that are just so flavoursome!

4 simple ingredients. Used as the base to all my tomato based recipes. Why am I making it a recipe? To refer to in my other recipes. Certainly not inventing the wheel here, but showcasing that delicious meals doesn’t always have be complicated and intricate.
This is the base for our pasta at home (even when adding a slow roast lamb). Its the base to baked eggs for the kids (or added Chilli Harrisa Sauce for us adults). It's the base to my meat balls recipe. It's even the base to a minestrone soup in our house.

Ingredients

1 can of Mutti Tomato polpa

1 bunch of basil, leaves only finely chopped

½-1 tablespoon of sea salt

2-3 cloves of garlic, crushed
Directions
In a saucepan, sautée with a heathy dollop of olive oil, the basil and garlic.
Take the pan off the heat and add the can of tomato polpa, adding a touch of water to get rid of the remnants of sauce left in the tin.
Stir in salt and mix thoroughly an turn heat to medium allowing it to bring to a boil.
Cook until the sauce thickens slightly.
Serve with fresh pasta or add to a slow cook of meat balls!
Don’t forget the freshly grated parmesan!
