Eating gluten free and dairy free can be tricky if you aren't use to it. This is a great substitute if you are looking for something decadent, rich but extremely nutritious. I love suggesting this recipe to my patients who are supporting their intestinal permeability, have candida (anywhere in the body), coeliac, lactose intolerant, auto-immune + thyroid conditions, but really it's great for everyone. The real hero of the dish are the black beans as they are high in fibre, protein, and non-heme iron. Don't believe me? Give it a try and see for yourself!
Ingredients

1 can (420g) of black beans- thoroughly rinsed

3 tablespoons of olive oil

3 eggs

1 teaspoon vanilla extract

¼ cup cacao powder

2/3 cup Monkfruit extract*

½ teaspoon of salt

½ teaspoon of baking powder

½ cup pana chocolate mylk choc chips
Directions
Preheat oven at 180 degrees.
Once thoroughly rinsed and drained, puree black beans in a food processor or stick whiz until there is a smooth consistency.
In a bowl, hand whisk black beans, olive oil, eggs and vanilla extract until combined.
In another bowl, combine cacao, monkfruit extract, salt, and baking powder.
Add the dry ingredients bowl to the wet one, and mix well.
Mix in choc chips and transfer to a silicone bread mould or individual mould of your choice.
Bake for 30 minutes or until firm to touch.
For a wonderful dessert, enjoy with some fresh raspberries and vanilla bean coyo!

* I use the brand Lakanto 'Monkfruit extract with erythritol'- raw cane sugar replacement' Great for diabetics and individuals with candida as erythritol won't feed the fungi infection.
** I love the Pana Organic mylk choc chips as they are additive free, gluten and dairy free and only semi-sweet.
