Calling all chocolate lovers! I love this recipe cause it hits the spot if you are a chocolate lover, yet is fibrous, refined sugar free, dairy free and gluten free.
Great for anyone trying to fix their gut. Cacao is a wonderful bitter food which is known to aid in digestion, coconut is a great medium chain fatty acid (also great for the gut) and buckwheat, peanuts, and tahini are full of fibre and omega 3 rich.
This is anti-inflammatory, low sugar per serve and great for my leaky gut people- your taste buds and bodies will be singing. Hope you love them as much as I did. As with anything, eat in moderation.

Ingredients

2 cups of puffed rice

3/4 cup cacao powder

¾ cup 100% maple syrup

½ cup desiccated coconut

1.2 cup buckini’s*

1-2 tablespoons tahini

1 cup granulated peanuts

1 cup cacao butter buttons*

cupcake patties pans.
Directions
Pour cacao butter buttons into a small saucepan and melt over stove.
Once 80% melted, add tahini.
Once ingredients are melted, take the mixture off the stove and stir in the cacao powder and maple syrup.
In another bowl, add puffed rice, desiccated coconut, granulated peanuts and buckini’s.
Pour melted mixture onto the dry ingredients, and spoon out into the patty pans (best to pop the cupcake patties on a tray first for refrigeration purposes).
Pop in the fridge for at least 2-3 hours or overnight. They are great to eat days later.
Recipe Note
*I find cacao butter buttons in Harris farm. I use the brand 'Chef's choice'- Certified organic raw cacao butter.
*Puffed rice can be found at any health food store or Harris farm as well. I use the brand 'Good morning cereals'- Organic brown rice puffs.
*Buckini's can be found at both a mainstream super market in the gluten free isle or at Harris farm as well. I use the brand 'loving earth'- raw organic activated buckwheat.
