Hands up who love Jam on Toast? Well this might tickle your fancy- It's much like the lovely packaged jar you would find in the supermarkets- but it's protein and anti-oxidant rich, low sugar but still sweet and satifiying.

This Chia Jam has the same consistency as a store bought jam, but is preservative free, nutrient rich and a great alternative to anyone wanting to reduce their sugar intake while still enjoying something sweet.
This is a family favourite with sourdough toast or on a wrap, on top of peanut butter celery boats, or in a sweet muffin!
Ingredients

2 cup of berries*

⅓ cup of water

2 tablespoons of black chia seeds
-
2 heaped spoons of collagen powder**

1 tablespoon of maple syrup or monkfruit extract***
Directions
In a saucepan, heat berries and water until it comes to a boil.
Transfer mixture into a bowl and whiz until smooth.
Add chia and collagen and stir in.
Add maple syrup or monk fruit to your liking of sweetness.
Recipe Note
* This is great to use up berries that are on their way out from the fridge, but for added nutrient value, choose a frozen option.
** I use Nutraorganic 'Collagen Beaty Powder' as it is hydrlozed so you don't need 'bloom' the collagen first,
* For my candida or diabetic patients- choose monk fruit extract to lower the overall sugar value.
