Often over looked, chicken wings are abundant in collagen, protein and fat soluble vitamins. These are a flavour bomb, with many herbs and spices providing anti-inflammatory, anti-viral and anti-bacterial properties. Kid friendly, air fryer friendly and cost effective. Sounds like a family win!

These are gluten free, dairy free, great for individuals wanting to support their intestinal permeability and kick some protein goals all at the same time. It's a great way to choose grass fed and finished produce without breaking the bank. I love making these in 2kg batches which can be reheated to go in the thermos the next day for school lunches. Kids love them, husband loves them (at the moment anyway). Enjoy!
Ingredients

2kg chicken wingettes*

½ red onion- finely diced

1 bunch of coriander- leaves only, finely diced

1 tablespoon olive oil

1 tablespoon of black or white wine vingear

1 heaped teapsoon of honey

1-2 tablespoon of white miso paste

Thumb size of grated fresh ginger

3 minced garlic bulbs

1 teaspoon of tajin’ salt mix or juice of 1 lemon

pinch of celtic sea salt

chopped chilli- optional
Directions
In a bowl, combine all marinade ingredients together.
Add chicken wingettes and combine.
In the air fryer (or oven) set to 180 degrees and cook for 15 minutes, turn and cook for another 8.
Allow to cool slightly and dig in!
Recipe Note
* I use an organic butcher and ask to to cut me chicken wingette's (only the flesh part of the wing), but any kind of chicken drumstick/ drumette/wing will work.
I buy 'Tajin' salt mix from fruitezy (availabe online or in their store locations: Pyrmont and Miranda or Maroubra).
I use miso paste by 'miso tasty' available in woolies
I use an organic honey- currently a gift from a friend's local farm or any organic honey- available at woolies.
Can be marinated and then frozen!
